Time: Less than 30 minutes
1 teaspoon of dijon mustard
1/2 teaspoon dried basil
1/4 cup good quality balsamic vinegar
1/2 cup PURE maple syrup
1 cup of extra virgin olive oil
1 tablespoon lemon juice
1 garlic clove, minced
1 teaspoon of salt
1/4 teaspoon fresh ground pepper
Place all ingredients in a bowl and whisk until it is all blended together.
Mesclun Mix or sweet baby romaine lettuce leaves
sliced apples (any kind)
thinly sliced red onions
good quality Gorgonzola cheese
sun flower seeds or sliced almonds
Pour desired amount of dressing over your salad and serve.
SUBSTITUTIONS AND GARNISHES
Anything is good with this sweet dressing: avocado, tomatoes, cucumbers...add what you like. I tend to keep it simple with ingredients easily found in the winter or abundant with what is available in the summer.
Taste it and adjust. No two balsamic vinegars or pure maple syrups are alike. Some are sweeter than others. So, if it's too sweet, add more vinegar or lemon juice or extra virgin olive oil (I've even used water!) Not sweet enough, add more syrup. Easy.
The dressing tastes best when it is room temperature or slightly warmed.
I get this question a lot --This is sweet, I thought sweet was bad? I tend to stay away from foods made with white sugars, corn syrups and preservatives. This vinaigrette is sweet and is as natural as I could get it with fewer calories than sugar.
Pure maple syrup is good for you! It contains manganese, zinc and other natural antioxidents which are excellent for your immune system.
