Serves: 4 to 6
About 1lb Lean Ground Turkey (pre-packaged, organic if you can find it).
1 Red Bell Pepper chopped
1 Yellow Bell Pepper chopped
1 Orange Bell Pepper chopped
1 Jalapeno Pepper chopped and seeds removed
1 Chipotle Pepper from canned variety (2 if you like more heat)
1/2 Large Sweet Onion chopped
1 can Organic Diced Tomatoes with juice
1 can Organic Black Beans (rinsed and drained)
1 + 1/2 teaspoon of Cumin
1 + 2 tablespoons of good quality Chili Powder
sea salt (to taste)
1/2 teaspoon of Garlic Powder
2 tablespoons of good quality Balsamic Vinegar
In a large size non-stick pan, saute ground turkey with salt, 1 teaspoon of cumin and 1 tablespoon of chili powder on medium/high heat, drain out what you can of the fat.
Reduce to medium heat and add remainder of ingredients and seasonings (except the beans) to the turkey and saute until the peppers begin to soften. As the vegetables soften add can of drained and rinsed beans.
Let chlii simmer on low heat as all the flavors blend together. Taste and adjust seasonings to your liking. Remove the chipotle peppers and serve.
SUBSTITUTIONS AND GARNISHES
If you like more heat in your chili, experiment by adding a pinch of cayenne pepper or hot sauce. For less heat, remove jalapenos
Use any variety of peppers or beans you like to eat. You can even eliminate the beans entirely if you're not big on beans. You can also add more vegetables like frozen organic corn or chopped celery.
For a heartier meal, make brown rice with organic chicken stock instead of water. Pour chili over rice and top with your favorite white cheese. I like to use shredded Kerrygold Dubliner Cheese.
Why use "white" cheese? White and off white is the natural color of cheese. Yellow and orange cheese is created with dye...do you really need that?
